I don't think this is ever fully explained anywhere.
It's possible that the process is irreversible, but more likely their reluctance simply stems from unease as a result of forcing the dead to have to fight. It is described as akin to necromancy in the eldar mind, so understandably it is not something they relish doing.
If a spirit stone is destroyed on the battlefield, then the eldar soul is lost to Slaanesh, so there is definite risk involved.
