How does one count it as a piece of terrain after it has been deployed and vacated by the crew? Is it blocking terrain, or an "open air environment" like the SM drop pod?

It's an immobile Monstrous Creature. It blocks LOS just like any other model. It depends on how yours look as to whether they are blocking terrain, etc. Remember, it can also attack on the turn it drops, as it's a monstrous creature, not a vehicle.

It's got a 6" range Ripper Tentacle Attack, and also can be armed with various weaponry that fires on the nearest enemy.
