Quick question for anyone that has stealth suit models and a hammerhead tank. Are 5 stealth suits tall/wide enough to give a hammer head a cover save?

No, not even close: you need to have 50% of the tank completely out of LoS (not like it is for infantry- tanks must be hidden, not just 'firing' though' cover) from the point of view of the firing model's eyes... basically put unless something weird is going on you will never hide any vehicle of any sort behind infantry (like a big unit of infantry on a rise/hill).

Why not just buy a disruption pod and keep the hammerhead at range? you'll still count as obscured.

Closely grouped Marines can easily obscure a Rhino. You only need to cover 50% of the facing you're in as well. So the front could be wide open but the side blocked 50% and it be in cover from the side.

I've got a question about sensor spines. Would this make you take the vehicle off the base for the purposes of getting 50% cover or is it something that was different in 4th edition and no longer does anything?

Well then lets say you've got this unlikely scenario: Could a big MC like a Greater Daemon or Tyranid Big monster give cover to a hammerhead? I know a Bloodthirster could, but could a great unclean one or hive tyrant (w/o wings) do the same?

This is of course if you're allied or fighting against said models

It could, if it actually blocked the LOS. It wouldn't even have to be an allied model as friendly models still block LOS.
