Hello, I was reading my BA codex earlier and noticed under the Sang priest entry, it says "1-3 Priests may be taken as a single elites choice"
does this mean that you may take 3 as a singe elites choice or use all three choices and take 9?

Nope, they're entirely separate units (and ICs at that).
You can think of it as pretty similar to how Platoons work, it's just a bunch of units crammed into a single FOC slot.
