First: I think itemized points cost is not allowed here so I would take them out again.

I don't have many experiences with 2500 points. But I think at that level you should field 3 Landraiders. Antitank like Multimeltas or Darklances are abundand in this pointsize so the more hard targets you field the harder it gets to take them out. And inside of them should be some CC units. Pure GK are universal units but not truely dedicated CC. DCA and Crusaders together with techmarines/inquisitors (grenades!) would be better. At least, if you go pure GK, I would use more Terminators. One squad per Landraider.

Warp Rift isn't really a good power (AP-), quicksilver is much better.
Nothing wrong with the GKSS-Squads except for those 8 men. Either use those points to max out the Interceptorsquad or use them both for Psyflemen dreads (venerable and regular). At 2.5k these two squads are very vulnerable and don't really contribute much to the army.

You can't have 11 grey knights in a strike squad, max is 10. That being said you army needs transports, unless you are planning on deep striking your strike squads which I wouldn't advise especially without servo skulls or teleporter homer to reduce scatter. The points you used for brotherhood banner could be better spent since the model taking the banner loses his force weapon meaning that in a 5 man squad you would only really get and extra 2 force weapon attacks.
