Not really in those 3 books- but there will be more novels about Sigmar in the future.

Realistically, could things be neatly wrapped up in one last trilogy? No, not "Can they be wrapped up..." (as anything can, even in a single book), but with Sigmar, can all the events that lead him into this whole godlike figure be done in the next trilogy or do you think GW/BL will milk it more?

Really they're going to do more Sigmar novels? I mean what else is of note that Sigmar did after defeating Nagash before leaving the Empire?

Whatever untold stories that McNeil (or whomever) wishes to tell. In this case, it is a blank slate, as long as it doesn't break crucial canon.

Considering he united almost all the tribes in the empire, making them put aside the feudal warring, making pay a tithe to the "greater good" of the empire, brings an army each time an allie is in need, made all the pompous/ proud / belligerent tribal leaders get down on one knee and swear loyalty to him, making said leaders relinquish their birth titles AND still remain pretty level headed (most of the time anyway) I would say he has done something rather remarkable and divine like.

As much as I've enjoyed McNeil's work on the original Sigmar Trilogy, I'd kill to have Chris Wraight do the final trilogy that ultimately has him venturing off past the mountains & into uncharted lands where he ultimately disappeared into legend (and godhood).
