If a character mounted on an Elven Steed joins a unit of Glade Riders, do they lose the fast cavalry ability

Nope.

Elven steeds come with the fast cavalry rule, so they don't rob it from glade riders... although various FAQs have removed/returned the rule: I guess GW couldn't make their mind up.
