Well for me aside from the common stuff everyone has listed (im not counting Avatar since it just wasnt that good, dont care how much money was spent or how many records it broke at the end of the day it sucked, though visucaly it was stunning thats all it had)

The Cube Trilogy, awesome series of films, if anyone hasnt watched them go and do it now. Im also going to list Time Bandits, how on earth has no one listed this is beyond me, absolute classic.

This means you have good taste. I hate that movie with a passion.

Never understood why there was a stigma on marketing a movie as "Sci-Fi" as it's just something that effects technology and setting.

My list:

Movies:
Blade Runner
Terminator 2
Chronicles of Riddick
Matrix
Serenity
Back to the Future 1/2/3
Superman 2
Fifth Element
Star Wars (series as a whole, personal favorite is Episode 3, I'm gonna get flak for that)
Total Recall (guilty pleasure)

TV:
Firefly
Star Trek Voyager

If we put Anime into the equation I'd add:

Movie:
Akira (though the Manga is infinitely better)
Wings of Honneamise
Galaxy Train 999 (along with it's TV shows, Mangas, and spin-offs. Yeah Captain Harlock)
Ghost in the Shell (or anything by Masamune Shirow)
Mobile Suit Gundam Trilogy (or the TV series, though I prefer the movies. Sequel series/Movies are decent but nothing tops the first in my mind. It's one of my favorite War movies too.)
Jin-Roh: The Wolf Brigade
Metropolis

TV series, Mini series or OVA's:
Cowboy Bebop
Outlaw Star
Trigun
Space battleship Yamato
Legend of the Galactic Hero's (not available in English)
Big-O
Super-Dimensional Fortress Macross (and spin-offs)
Cyborg 009
Kikaider: The Animation
Neon Genesis Evangelion

Think that covers my list.
