I haven't seen much anime, but I would recommend the following, especially if you can find a dub:

Cowboy Bebop (Amazing performances, writing and fantastic music)
Hellsing OVA (much closer to the manga and very well animated)
Desert Punk (Not always SFW, but hilarious and has an interesting cast)
Trigun (The first half of the series is comedic, the second very somber)
Outlaw Star (A good space pirate series)
Time of Eve (Thought provoking and a legitimately well written story)

That which doesn't kill me has made a tactical mistake.

Jeez it's been a long time since I've watched anime. I used to watch a bunch of it on adult swim in middle school and I quickly lost interest in high school but there are still some perennial favorites that still appeal to me.

Cowboy Bebop, Outlaw Star and Trigun were definitely my favorites (good choices btw Underground Heretic). All are very, very well written and have incredible immersion. I did see one episode of death note a while ago and while it wasn't bad or anything, it really didn't catch my eye.

Witch Hunter Robyn
Ghost in the Shell
Tri-Gun
Serial Experiments Lain

All those are good.

I was disapointed with Death Note, the ending of the series was horrid.

I can only add to the Ghost in the Shell supporters, hence the Avatar . A brilliant Anime, so well made. I`d advise the Film-variants also, even if Innocence was slightly tacked by Hollywood.
